In 2016, founder and brewer Mirek Aldridge set out to start his own brewery, after solidifying his brewing skills homebrewing for many years. Originally starting off with most inspiration taken from American style beers, over the years the styles were sculpted to better suit the patrons coming through the Collingwood taproom and keeping up with current trends in the industry. They now offer a range of styles to suit all types of drinkers pouring across 12 taps. The Mill Brewery brand philosophy has always been focused on great quality beer with the finest ingredients available. Independence, inclusivity and sustainability have also been at the forefront of the business since the day one.
