International can of mystery, Wayne Dubois, recently fell into the hands of the fiends at the Counter Culture Lab where they transformed him into an intriguing hybrid of French sophistication and Australian good times – a sparkling shiraz sour.
Who Really Is Wayne Dubois? – The Beer
An International Can of Mystery.
Once Wayne was in the clutches of Counter Culture, the mixed fermentation madness began. They took the finest Australian pale and wheat malts and Tettnang hops and combined it with a selected Shiraz yeast strain and lactobacillus transforming him into a soft and refreshing presence.
Sour by name, not by reputation, Wayne casts a ruby hue and fills the air with scents of berry and white pepper. Vanillin and coconut make him a well-balanced treat, but it was his time spent among the American oak that will really stay with you.

- SA Shiraz grapes
- Pale, wheat and rolled malts
- Tettnang hops
- 7.0% alc/vol
Wine and beer hybrid inspired by the Australian wine creation – Sparkling Shiraz. This beer has been sour brewed and fermented with the finest Aus. pale and wheat malts, SA Shiraz grapes and Tettnang hops. It was mixed-fermented with a selected Shiraz yeast strain and lactobacillus to undergoes malolactic fermentation to give a softer and more refreshing acidity.
This beer pours with a ruby-purple hue and has fruity aromas of blackberry and blueberry with hints of white pepper. Balanced with suggestions of lactones of vanillin and coconut and lengthy finish from ageing on American oak.
Availability
Like all the limited-release beers in the Counter Culture range, Who Really Is Wayne Dubois? will be sold in packs of two 500ml cans on Stone & Wood’s online store, as well in bottle shops and on tap at the Stone & Wood breweries in Byron Bay and Brisbane in limited volumes.
After 10 weeks or so, Wayne Dubois will make his escape, so be sure to capture time with him while you can.

Counter Culture
Launched in March 2019, the Counter Culture beers will release a new brew every 10 weeks or so, after which they’ll disappear. The range will also feature recipes never tried at Stone & Wood, as well as popular Pilot Batch beers from the past, collaboration brews and beer inspired by the broader brewing community.
