Sydney start-up finds head brewer
Sauce Brewing has appointed a head brewer as it prepares to launch its Marrickville brewery and taproom.
Brodie French, formerly of Brewpack and Icon, will head up brewing operations at the company founded by Mike Clarke.
“The role of head brewer is one of the most important, if not the most important, roles in the business,” said Clarke.
“I started advertising well in advance, giving myself 3 months to find the right person. It’s not like Australia is drowning in top-class, unemployed head brewers at the moment, so I knew it could take some time.
“Brodie really impressed us with his knowledge and his attitude to brewing. His ‘big brewery’ thinking when it came to processes and quality control will be a huge benefit to us. It’s something a lot of small breweries lack.”
Sauce has targeted an August launch for its own facility, having traded as a gypsy brewer since late 2016.
